Hollow Crown parsnips are easy to grow with well-tapered crowns that are white and smooth.

Hollow Crown produces heavy yields that grow to be 30 cm (12") long with 5 cm (2") crowns. When young and tender, the roots are delicious raw. These parsnips are also excellent in soups, stews, and vegetable dishes. Frost enhances the sweet delicate nut-like flavor.

  • Preparation Ideas: Parsnips are at peak flavor if harvested after first frost. Peel, remove ends and cut into 1" pieces. Bring 1" of water to a boil in a medium sized pot. Add parsnip pieces and cover. Cook parsnip until fork tender (approximately 10 minutes). Drain water and mash parsnips like potatoes. Add salt and pepper and any other desired flavorings.

    Growing Instructions:

    Parsnip is a cool season crop and seeds can be sown directly in the garden in early Spring as soon as the soil can be worked.P Space seeds and plant to the depth indicated below. Press seeds into the soil to ensure good contact and cover with 1.3 cm (1/2") of soil. After planting, water seeds with a gentle mist or shower. It is critical to keep the soil consistently moist, but not soggy during germination. When your seedlings reach a height of a few centimetres (inches) and have developed 2 or 3 pairs of leaves, it is important to thin them out, according to the plant spacing indicated below. Do not allow the soil to become dry, as young plants have underdeveloped roots and can quickly dehydrate, particularly in windy conditions.

  • Seed Spacing: Sow parsnip seeds roughly 1.3 cm (1/2") apart in rows, keeping rows approximately 45 cm (18") apart.

  • It takes up to 28 days for seeds to germinate and the soil should not be allowed to dry out or crusted over during this time as this will impact germination success.
  • Care should be taken when handling the foliage of parnsip and it is recommended to wear gloves when harvesting. Remove and discard the foliage before bringing parsnip into your house.
  • Parsnips are ready for harvest in the fall, after a frost when they become more flavorful. The frost sweetens the parsnips by converting starches to sugars within the roots.
  • If your parsnips are long and spindly it may be due to them being sown too late, harvested too early or having insufficient soil nutrients. Like carrots, parsnip soil that is free of weeds or stones. Loose soil will produce long, straight roots. Clay, weedy or rocky soil will produce forked roots.
